If you choose to continue after book 1, skip Book 2. Seriously. The only relevant thing that happens is that Satan plots to open spirit portals to break free and Korra left them open after defeating him so there's slightly more spirits now, the lineage of Avatars is lost cause the Avatar spirit died temporarily, Korra becomes somewhat more mature and Jinora has spiritual powers that don't do much beyond being a plot device/deus ex machina. Thanks to Satan, some of the swamp's giant vines now grow in Republic City. That's pretty much all you need to know for the later seasons to make sense.
